Istrian cheese in Teran wine is a hard, full-fat cheese that aged for 60 days in barrique barrels filled with red wine from the indigenous Teran grape variety. After the optimal aging time, the cheese is removed from the wine and is immediately ready for consumption. The wine gives the rind its distinctive purple-brown colour, while the interior ranges from light yellow to yellow. It has a firm texture that is ideal for slicing. Enjoy it on its own, as an aperitif, paired with a good wine, or drizzled with extra virgin olive oil.
