Apart from its interesting colour, blue potatoes are also distinguished by their nutritional richness. Blue potatoes are extremely rich in antioxidants, especially anthocyanin (the pigment from which its blue colour originates) and beta carotene, as well as in dietary fibre. Due to the amount of fibre and protein they contain, blue potatoes are easily digestible and are suitable for consumption in the late afternoon. You can prepare them like all other types of potatoes - fry, bake, cook. Serve them as a part of a salad or in combination with various herbs, garlic, corn and beans.
Blue potatoes are grown in the area of Sunger in the fields of Bitoraj in the Municipality of Mrkopalj (800 m above sea level), on loamy sandy and porous soil that is ideal for potato production.
